Those are some beautifully restored cockpits, Sean. Admittedly a couple of them have some avionics installed that are about 50 years too late though (take a look at the nav/com radio with the LCD display right in the top center of the P-47D panel on the 5th page). It's amazing how well they can be restored if people will just take the time to do them right.
It's also amazing how rudimentary some of them were back then. The ME-163B cockpit on the 4th page has virtually no instrumentation for what was then a radically unique aircraft.
