I have used white (which can be a pain sometimes), gray, and tan on quite a few. I will use white with dark blue body, black body...gray with red body, tan with black body or red body...just stuff like that. If you use white make sure you use a gloss coat over any interior detailing because it will mix with the detail color. (Oh, I most generally use a flat color for the interior.)
Many times I just do an image search on Google for whatever I am working on and use those for ideas. I have also been guilty of using ideas that I find in parking lots. If you want factory stock colors you can find them many times by doing a search for the type of car along with interior colors. I hope that helps you out some.

What I think is cool looking and what I use now for my interiors and uptops is Krylon “Suede”. It’s available in Bordeaux, Caramel, Buckskin and Berber. I also use Krylon “Textured Elegance” for my vinyl tops. I usually buy it at Michael’s Arts & Crafts. I still do a fair share in black because it’s the most popular interior color for any type of vehicle

I just picked up 2 more new "Suede" colors: Brushed Sienna which is like a leather or rust color; and Brittania which is a medium blue in which I’m planning to use on a 32 Vicky that I’m working on There’s also a green color that I still need to get and that should complete the set of available suede colors
